So Christmas is upon us and it is traditionally a busy time for Cake bakers!! I made my first Christmas Cake last week for a lovely lady who wanted a Christmas Cake which would be used as a raffle prize for a social group that she attends. The cake I made was a 9 inch traditional Christmas Cake with fruit which has been sitting in a vat of brandy, rum and sherry all year round. I blended the fruit as you tend to get a smoother cake that way. Then I covered with marzipan, then with red sugar paste. Decorated with white sugar paste Christmas Trees then added sparkle!! I loved how it came out..
